feat: Update submodule URLs to yuzu-mirror

Updates the URLs for the following submodules to point to the yuzu-mirror organization:
- dynarmic
- discord-rpc
- sirit
- mbedtls
- breakpad
- oaknut

Also updates the copyright year and project name in the header comment.
